3-Min Chocolate Peanut Butter Date Cups

I haven't been the best at posting recipes lately; for those who love them, I'm sorry! It was such a huge part of what I used to do, but just isn't anymore.
I still cook and bake all the time for my family of course, I just don't take pics and post them!
But I made these and felt they absolutely needed to be shared!
It's 33 degrees and everyone wanted ice cream but I didn't want processed, sugar- and fructose-filled "ice cream", and I didn't have any organic ice creams left in the freezer, so I just whacked these ingredients together and put them in the freezer so it was kind of like ice cream!
So easy to make and so delicious. I'm not saying they're "calorie free" but they're yummy and full of goodness and won't impact your health negatively - so... yay!
Ingredients
- I used mini cardboard cupcake cups
- A bunch of medjool dates depending on how many cups you are filling (about 2 dates per cup)
- Peanut or almond butter
- Organic dark chocolate
Method
Melt the chocolate in a glass bowl over boiling water.
Push the dates down into the bottom of the cups, about 2 dates each, pulled apart a bit but pushed so they are like one big cup shape at the bottom and covering a little of the sides.
Put a spoon of nut butter into the hole in the middle.
Spoon the melted chocolate on top.
Put in fridge or freezer.
It's that easy!
In love & health,
Lauren
