Vanilla & Cardamom Peaches

It’s officially Autumn, which means time for warm foods and warming flavours. Nothing says Autumn like cardamom and other spices such as vanilla, cinnamon and star anise, and they work so well in desserts and cakes, especially with fruits like peaches.

This is a really easy dessert option, great if you have lots of people over, or for an easy Friday night dessert, or for a lunch party.

I teamed it up with some creamy coconut yoghurt from Coyo, and sprinkled it with some of my Apple & Cinnamon Granola – it was a perfect combination!

Ingredients (serves 3 people)

2 peaches
1 heaped tbsp coconut palm sugar
1 vanilla pod
1 tsp ground cardamom
A few tbsp water

Method

First slice the peaches.

Add a few tablespoons of filtered water to a saucepan and add the coconut palm sugar. Now cut open a vanilla pod and scrape out the seeds with a knife and put it in the pan, followed by the cardamom.

Heat gently on a low heat so that the sugar doesn’t crystalise. If it’s too thick, add some more water.

Add the peaches and cover them with the juice and leave to cook on a low heat for about 5 minutes.

Spoon onto a plate or on top of some coconut or almond milk yoghurt, sprinkle with granola or flaked almonds.
