We LOVE pancakes in our house. I say “we”. My children have no idea how lucky they are, and they don’t like pancakes (what is wrong with them!) but my husband and I are obsessed and because part of my love language is food (or just the act of doing small deeds that I then don’t have to do myself), my husband always knows how to make me happy on a Sunday morning with pancakes!
This is actually his recipe that he has perfected over the years, so all credit goes to him.
These are also a great baby led weaning option!
We add a bunch of superfoods to get those into us (we’d usually put them in a smoothie a few times a week also), but you can leave them out or choose whichever superfoods you like!
Ingredients (yields 4-6 pancakes)
3 cups oats
2 cups milk of choice
2 eggs
2 heaped tbsp nut butter of choice
1 date (add 2 if you prefer it sweeter. You could also use honey, maple or agave here)
Superfoods. We use: Mushroom blend, wheatgrass powder, collagen peptides or bone broth powder, açai berry powder, maca powder, ashwaganda.
Method
Add all ingredients to the blender and blend until smooth.
Heat some butter or ghee in a pan and cook the pancakes until brown on each side.
Smother with grass-fed organic butter or any spread of choice!
