I just had my lunch and opened the jar of pecans for a little post-lunch crunch, and as I stood there eating them, marvelling over how much I love nuts, I wondered why no one had ever made pecan butter?! We hear about almond butter, peanut butter and I’m a massive fan of cashew butter, but why have I never thought to take one of my favourite nuts (not that I could choose) and make a pecan butter?!
I mean, maybe people have done this and I’m late to the game, but it’s not something I’ve heard of.
So, in the middle of the day on a Monday, when I have a book to write and a business to run before the kids come home, I stood there blending pecans.
But wow, you’ll be glad I did!
It’s absolutely delicious.
Now, you HAVE to blend for 10-15 mins before it goes buttery and soft, and you need a really high speed blender (I used my MagiMix).
I’ve just asked ChatGPT, and apparently the oils in pecans separate much quicker than other nuts, which can make this nut butter go rancid quicker than others if not stored properly, but I can’t imagine this will last more than a few days once my husband sees it!
Ingredients
Pecans – I used about 3-4 cups. It could be better to roast them first if you have time, but I didn’t
Salt
Vanilla paste (optional)
Method
Put the pecans in the high speed blender / food processor and every so often while they’re still more of a meal than a butter, you’ll have to stop and use a spatula to push it all back down from the sides.
Once this stops, just let the blender go for 10-15 minutes until it looks soft enough to drizzle.
Add some salt and vanilla if using, blend again, then transfer into a clean glass jar.
It will be hot, so wait until it cools down before putting the lid on.
Store somewhere dark.
