Gluten Free Pear & Peach Crumble

Here we are in the midst of Covid-19 Lockdown. A whole article (probably more) can be dedicated to all the facets that make up that subject but this one is solely about food. Crumble, namely. Because when at home, make crumble.

I’m not one for tinned fruit generally, as they tend to have sugary syrups in, but in preparation for lockdown my husband bought some peaches so I made a pear and peach crumble – free from gluten and refined sugar (unless your peaches have sugar in the syrup). You can sub butter for coconut oil or dairy free butter, but we’re increasing our vitamin A right now, so upping the organic, grass-fed butter.

So easy to make and such comfort food for times like these when comfort really is necessary.

Ingredients

1 tin peaches
3 pears, sliced and stewed
Some coconut palm sugar
Vanilla powder if you have, but if not, it’s not necessary
1 cup oats
1 cup gluten free flour
1 cup butter
Drizzle of honey
Ground cinnamon and nutmeg.

Method

Stew the pears and when they soften add some vanilla powder. Add the peaches at the end, then sprinkle in around 2 tbsp of the sugar and cook for 5 mins. Transfer to an oven proof dish and sprinkle with cinnamon and nutmeg.

Add the oats and flour to a large bowl, then add the butter and mix it in with your fingers until it becomes crumble-like. Add a big drizzle of honey and about 3 tbsp of the sugar and mix in again.

Crumble it over the fruit mixture, put it in the oven for 20 – 30 mins and serve with ice cream or cream of choice.
