Easy Chia Raisin Cookies

3pm. Rainy day. Cup of tea. Cookie. Have I painted enough of a picture for you? There really is nothing better than a biscuit with a cup of tea come the afternoon if you’re having one of those days (let’s try not to do it every day, healthy or not!) but of course we want the healthiest version possible and not only that, they need to be easy to make.

As a mum myself I am constantly on the go, and I know a lot of my followers are too, so these things can’t take up hours each week to make.

With that in mind, these really are the easiest cookies to make. They only use 6 ingredients and you can throw it together pretty quickly. The only thing that takes slightly longer is pressing them down into cookie shapes on the baking tray. But then they only need about 8 minutes in the oven, so it swings in roundabouts!

Chia seeds are an excellent source of plant-based protein and also great for lowering blood pressure.

Ingredients

12-13 dates
1.5 cups ground almonds
1 tbsp coconut oil, melted
3 tbsp almond milk or any other dairy free milk
1 tbsp chia seeds
Handful raisins

Method

Preheat the oven to 180* and line 2 baking trays with baking paper and grease with coconut oil.

Simply put all the ingredients apart from the raisins in the food processor and whizz until it looks like a big ball of cookie dough (good enough to eat raw!)

Add the raisins and pulse a few times to incorporate.

Roll little balls in your hands and place on the tray, then press down into cookie shapes.

Put in the oven for 8-10 minutes (10 if not a fan oven). They are meant to be quite chewy but they will still harden slightly when they come out the oven so don’t worry if they look a bit soft, just make sure they’re golden round the edges.
