Well these certainly got a good response from my very first Instagram reel! And I promised there that if enough people commented I’d post the recipe so here it is! These are so utterly, mouth-wateringly delicious you will want to make them instantly! Of course, they’re also free from gluten, dairy, refined sugar and eggs. And you won’t believe how easy they are to make!
If you make the recipe, please take a pic and share on your stories and tag me 🙂
Ingredients
1 can of cooked chickpeas, drained
1/2 cup maple syrup or agave
1/2 cup smooth peanut butter
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
Handful chocolate chips
For the chocolate layer:
1/4 cup raw cacao powder
1/4 cup ground almonds
Method
Preheat the oven to 180* and line a square baking tin with baking paper. This will even work in a loaf tin as it doesn’t yield a huge amount (you could double the recipe to fit the whole square if you wanted).
Mix the chickpeas, maple, peanut butter, baking powder and baking soda in a food processor until smooth.
Pour into a bowl and mix in the chocolate chips.
Pour just under half of this mixture into another bowl, and add in the cacao and ground almonds.
Smooth the first mixture into your prepared tin, then smooth the chocolate one on top, pushing it down slightly so that it’s sticking to the bottom layer.
Bake for 15 minutes then transfer to a wire rack to cool and only cut into squares once completely cool.
Love & health,
Lauren
