Creamy Vegan Spinach & Artichoke Dip

LOVE spinach and artichoke dip so much. For me, it's the ultimate comfort food. I love creamy things! So I wanted to make an option for a dairy free and really easy-peasy version of the traditional one, and here it is (ps if you're not dairy free, just use whichever variations you usually would)

Ingredients

1 bag spinach, washed1 tin artichoke hearts
1 tub Oatly creme fraiche
1 tub full fat organic cream cheese or dairy free soft 'cheese' spread
Handful organic, grass-fed grated cheese or dairy free grated cheese (Follow Your Heart or Violife work well)
Handful nutritional yeast (Optional)
Salt & pepper
Grass-fed organic butter or dairy free butter for cooking
Method

Cook the spinach in butter of choice in a pan until it's all wilted, add some garlic salt as it cooks.

Once it's ready, add to a large bowl, drain the artichoke hearts, chop them up and add these and the rest of the ingredients to the bowl, adding salt and pepper to taste and mixing well.


Spoon into a baking dish, sprinkle some more grated cheese or nutritional yeast over the top and bake for 30 mins.
