I LOVE spinach and artichoke dip so much. For me, it’s the ultimate comfort food. I love creamy things! I made a vegan one a while back, but as incorporating more organic fats into our diets has become more important, and more importantly, processed food is not any option anymore (which many of the vegan options are), I thought I’d update the recipe using organic dairy options.
Please remember the importance of eating ORGANIC dairy. Any dairy that is not organic would have come from cows injected with growth hormones, steroids, antibiotics and now Bovaer feed additive – all extremely harmful for us to be consuming, not to mention the food that the cows are eating all containing huge amounts of glyphosate and other harmful toxins, and the manner in which the cows are kept – that energy of fear and sadness, I believe, filters down through the food.
Organic dairy or no dairy in my case!
Ingredients
1 bag spinach, washed
1 tin artichoke hearts
1 tub creme fraiche (double cream will work too)
1 tub full fat organic cream cheese
Handful organic, grass-fed grated cheese
Salt & pepper
Grass-fed organic butter for cooking
Method
Cook the spinach in butter in a pan until it’s all wilted, add some garlic salt as it cooks.
Once it’s ready, add to a large bowl, drain the artichoke hearts, chop them up and add these and the rest of the ingredients to the bowl, adding salt and pepper to taste and mixing well.
Spoon into a baking dish, sprinkle some more grated cheese over the top and bake for 30 mins.
Serve warm with choice of bread or crackers.
