In an attempt to connect more with my Instagram followers, I am making a conscious effort to put my own face on more of my posts, as opposed to just food and kids! So here I am with the most sumptuous pieces of deliciousness – chocolate orange coconut bites. They’re a bit like Rice Krispie cups, just with coconut and healthier!
They contain no gluten, dairy, refined sugar, eggs or soya and are vegan. You can use just the orange peel, or you can add some wild orange essential oil too, like I did. As always I only use doTERRA when ingesting oils as I feel confident when it comes to their purity. If you’d like to know more about this please get in touch.
These require no baking, just about half an hour in the fridge to set, and apart from the tray they are setting in, you only need 1 pan and a wooden spoon to make them.

Ingredients
About 2 cups unsweetened coconut flakes (the large flakes), or enough to cover the bottom of a square baking tray.
4 heaped tbsp raw cacao powder
1/2 cup cacao butter
1/4 cup coconut oil
1 tbsp maple syrup, agave or honey (you can adjust as per your own sweetness requirements)
Pinch Himalayan salt
Rind of 1 orange
3-4 drops doTERRA wild orange (optional)
Method
Line a square brownie baking tray with baking paper and grease with coconut oil.
Cover with coconut flakes.
Put the remaining ingredients, except for the orange rind, into a saucepan and heat gently.
Once melted, add the orange rind, give it a quick, gentle stir, then pour the whole lot over the coconut until it’s evenly distributed.
Wait until it cools a little, then put it into the fridge to set for around half an hour.
Once set, break or cut into pieces and store in an airtight container – that’s if you can stop yourself devouring the lot!
