Firstly, please excuse the poor quality picture. My camera has broken so this was taken on my phone. But anyway, who cares, because they taste so good and you’re still going to make them, right?!
I had a half-eaten box of Rude Health Brown Rice Puffs in the cupboard and wanted to use them, and plus I’m pregnant and just deserve chocolate so I thought, why not indeed! I am trying to increase my magnesium intake as I seem to be lacking a little bit, and raw cacao is full of it. They really don’t need much more in the way of explanation apart from to say that they are of course free of gluten, dairy, refined sugar and eggs, and are totally vegan.
All you need is a donut tray (I used this one from Amazon), a saucepan and some room in the fridge.
Ingredients
1 cup brown rice puffs or other gluten free rice puffs
2 tbsp coconut oil
4 tbsp raw cacao powder
1 tbsp maple syrup (or more depending on your sweetness preferences)
1 tbsp cashew or almond butter
Method
Simply melt all the ingredients together in a saucepan, gently without letting it boil. If there isn’t enough, just add more ingredients. If it needs thickening, add more nut butter and cacao powder but make sure to adjust the sweetness to taste.
Once it’s melted, take off the heat and stir in the rice puffs, then spoon into the donut tray.
Leave to cool on the side. Once cool put in the fridge for an hour, then remove from the holes and store in an airtight container in the fridge, that’s if there are any left to spare!
