Chocolate Almond Cookies – GF DF SF V

On the weekend we make … COOKIES!

These are so easy to make, require just a handful of ingredients, are free from gluten, dairy, refined sugar and eggs, and are super delicious. A friend who is staying with us right now said they’re the best cookies I’ve ever made and I also made a few batches for Daniel to take to the office and apparently they went down a treat there, too. So all in all, I’d say give them a whirl!

Ingredients

1 1/3 cups spelt or brown rice flour (both work just fine. GF flour would work too)
1/4 cup ground almonds
1/4 cup maple syrup
1/2 cup smooth almond butter (peanut butter would work too – needs to be the runny kind! I use Meridian)
4 heaped tbsp coconut oil, melted
Handful cacao nibs – you can also use chocolate chips or even fruit

Method

Preheat the oven to 180* and line a baking tray (I needed 2 baking trays) with baking paper.

All you need to do is mix all the ingredients together in a bowl, saving the cacao nibs until you’ve mixed in everything else then making sure those are evenly incorporated.

Roll into little balls then flatten on the tray, then put in the oven for 7-8 mins.

Transfer to a wire rack to cool and then enjoy!
