Sorry I haven’t posted for a while. Baby Vida is 12 weeks today and has been keeping me busy! As you can imagine I don’t have much time to blog at the moment but I wanted to post this amazingly delicious and easy-to-make crumble recipe for you all to try. It takes no time at all to throw together and can be eaten warm or cold (I prefer warm, especially now in the winter!)

It’s free from gluten, dairy, refined sugar and eggs and is vegan.

Ingredients

Filling:
450g frozen cherries, defrosted (or fresh if you can get)
3 cooking apples
3 tbsp coconut palm sugar
Splash of lemon juice

Crumble:
About 5 tbsp coconut oil, add more if needed (can sub for organic grass-fed butter if not vegan)
150g buckwheat flour
60g rolled oats
4 tbsp ground almonds
60g coconut palm sugar
A few pecans for the topping

Method

Preheat the oven to 180*.

Peel and chop the apples, then put them along with the cherries in a saucepan over a low heat, stirring occasionally so they don’t stick to the bottom. The cherries should let off enough water but if they don’t, add a little water to keep it moist. Add the coconut palm sugar and once fully soft, mash with a fork and spoon into the bottom of a casserole or pyrex dish.

To make the crumble, simply mix all the dry ingredients together, then massage in the coconut oil with your hands until a crumble forms. Top with pecans.

Put in the oven for around 20-30 minutes and serve warm with your choice of dairy-free cream, ice cream or just plain.
