I’m such a granola fanatic. Can’t stop making it – all sorts of flavours! You can see all my granola recipes here. The most popular one is the probably the classic maple and pecan, but I’m hoping this Chai Spiced Granola makes it up there on your lists too, it’s just delicious!
I love chai tea and anything with warming spices like cardamom and cinnamon, so I created this with that in mind. I also feel like these flavours are so perfect for autumn – warming and nourishing and delicious. Even the picture looks autumnal, doesn’t it?
This is a great option for breastfeeding mothers as oats add nutritional value to breast milk, and the warming spices help supply and aid baby’s digestion, so really it’s a win win for all!
I served it here with some coconut yoghurt and a dollop of cashew butter.
This has just come out the oven and my house literally smells like heaven 🙂
Ingredients
3 cups organic jumbo rolled oats
3 tbsp chia seeds
3 tbsp coconut flakes
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground nutmeg
1 tsp ground cardamom
1/2 tsp all spice
2 tbsp coconut palm sugar
3 tbsp coconut oil, melted
Quarter cup maple syrup or agave
Method
Preheat the oven to 180* and line 2 oven trays with baking paper.
Mix all the dry ingredients in a large bowl, then add the coconut oil and maple syrup and mix until all pieces of oats are coated.
Divide between the 2 trays and bake for 10 minutes, then give a bit of a mix with a wooden spoon, and bake for a further 5-10 minutes, or until you can see it browning but before it burns.
Store in a large jar for up to 3 months.
