Chai Spiced Baked Oatmeal

Breakfast

Porridge, overnight oats, oat smoothies, banana oat loaf, oaty bites, oat cookies, granola, flapjacks - not much you can’t do when it comes to variation with oats. And now I bring you baked oatmeal. Whatta brekkie! Y’all know I love my chai flavours so I threw some cardamom, cinnamon and saffron in there and topped with crushed pistachios. This is a wonderful way to start your day and is of course free from gluten, dairy, refined sugar and eggs. Ingredients - 2 cups rolled oats - 2 cups milk of choice (I used oat, unintentionally!) - 2 mashed bananas - 1 tsp baking powder - ground cardamom - ground cinnamon - a few saffron strands - drizzle of date syrup - chopped nuts of choice to top (optional) Method Preheat the oven to 180*, mix all the ingredients in a bowl and mix well, then spoon into a baking dish and bake for around 25 minutes. Serve with yoghurt (I used Nush) or cashew butter! Love & health, Lauren
