Blueberry Oat Bars For Baby Led Weaning

Hashtag mumlife – I literally don’t have time to write a long post but wanted to share these very easy-to-make blueberry oat bars which are stodgy and yummy, not too sweet (only use banana and nothing else to sweeten), and are perfect for baby led weaning. Enjoy!

Ingredients

1 flax egg (1 tbsp ground flax mixed with 3 tbsp water)
1.5 cups oats
1/2 cup buckwheat flour
1 teaspoon baking powder
5 tbsp coconut oil
2 bananas mashed
Big handful of organic blueberries

Method

  1. Preheat oven to 180ºC and line a loaf tin with baking paper
  2. Mix the flax and water to make the flax egg and set aside
  3. Heat the coconut oil gently in a saucepan and leave to cool
  4. Add the oats, flour and baking powder to a bowl and mix
  5. In another bowl mash the bananas and add the coconut oil, then the flax egg, then add the oat mix to this one, mixing until incorporated
  6. Add the blueberries and mix until evenly distributed
  7. Pour the mixture into the loaf tin and press down with a spoon or your fingers
  8. Bake for around 15 minutes, until starting to go golden on top but still moist inside
  9. Cool fully before slicing into bars or small baby bites.
