Hashtag mumlife – I literally don’t have time to write a long post but wanted to share these very easy-to-make blueberry oat bars which are stodgy and yummy, not too sweet (only use banana and nothing else to sweeten), and are perfect for baby led weaning. Enjoy!
Ingredients
1 flax egg (1 tbsp ground flax mixed with 3 tbsp water)
1.5 cups oats
1/2 cup buckwheat flour
1 teaspoon baking powder
5 tbsp coconut oil
2 bananas mashed
Big handful of organic blueberries
Method
- Preheat oven to 180ºC and line a loaf tin with baking paper
- Mix the flax and water to make the flax egg and set aside
- Heat the coconut oil gently in a saucepan and leave to cool
- Add the oats, flour and baking powder to a bowl and mix
- In another bowl mash the bananas and add the coconut oil, then the flax egg, then add the oat mix to this one, mixing until incorporated
- Add the blueberries and mix until evenly distributed
- Pour the mixture into the loaf tin and press down with a spoon or your fingers
- Bake for around 15 minutes, until starting to go golden on top but still moist inside
- Cool fully before slicing into bars or small baby bites.
