Porridge, overnight oats, oat smoothies, banana oat loaf, oaty bites, oat cookies, granola, flapjacks – not much you can’t do when it comes to variation with oats. And now I bring you baked oatmeal. Whatta brekkie! Y’all know I love my chai flavours so I threw some cardamom, cinnamon and saffron in there and topped with crushed pistachios.
This is a wonderful way to start your day and is of course free from gluten, dairy, refined sugar and eggs.
Ingredients
– 2 cups rolled oats
– 2 cups milk of choice (I used oat, unintentionally!)
– 2 mashed bananas
– 1 tsp baking powder
– ground cardamom
– ground cinnamon
– a few saffron strands – drizzle of date syrup
– chopped nuts of choice to top (optional)
Method
Preheat the oven to 180*, mix all the ingredients in a bowl and mix well, then spoon into a baking dish and bake for around 25 minutes.
Serve with yoghurt (I used Nush) or cashew butter!
