Yes yes, I’m that mum that makes jam, the mum that people take the mick out of; ‘Oh I’m not going to sit at home and make my own jam.’ Well I’m proud of the fact that everything my family eats is made by us. And what beats homemade breads and jams? I certainly don’t ‘sit at home’. It’s hard work making everything from scratch! But it’s worth the effort, I believe. Especially when food tastes this good and is this nutritious. How awesome to be able to take everyday unhealthy household staples and make them healthy.
Anyway, my mum has heaps of blackberries in her garden and all around her house so she keeps picking them and dropping off massive tubs full of them at my house. I’m not complaining! So far I’ve made crumble (you can use this recipe and sub the other fruit for blackberries), added to smoothies, eaten ‘as is’, and today we made blackberry chia jam and it’s so yummy. (I say we; Braxton sat there eating the blackberries while I made the jam!) Plus, you only need 3 simple ingredients… so why not give it a whirl?
Ingredients
2 cups blackberries
2 tbsp chia seeds
3 tbsp maple syrup
Method
Heat the blackberries over a low heat for about 15 minutes, or until they start to go soft.
Once they’re soft enough, mash them with a fork, then add the chia seeds and maple and leave on the low heat for another 20 minutes, stirring occasionally to stop it sticking to the pan.
Spoon into a jar and leave to cool. Once cool store in the fridge for up to a week.
