I LOVE spinach and artichoke dip so much. For me, it’s the ultimate comfort food. I love creamy things! So I wanted to make a dairy free and really easy-peasy version of the traditional one, and here it is (ps if you’re not dairy free, just use whichever variations you usually would):
1 bag spinach, washed
1 tin artichoke hearts
1 tub Oatly creme fraiche
1 tub dairy free soft ‘cheese’ spread
Handful dairy free grated cheese (I used Follow Your Heart or Violife)
Handful nutritional yeast (Optional)
Salt & pepper
Diary free butter or oil of choice for cooking
Cook the spinach in oil / butter of choice in a pan until it’s all wilted, add some garlic salt as it cooks.
Once it’s ready, add to a large bowl, drain the artichoke hearts and add these and the rest of the ingredients to the bowl, adding salt and pepper to taste and mixing well.
Spoon into a baking dish, sprinkle some more grated ‘cheese’ or nutritional yeast over the top and bake for 30 mins.
Serve warm with choice of bread or crackers.
