I’ve been adding tahini to everything recently. My friend found it weird, saying, Isn’t it only for savoury dishes? NOOOOOOOO! Tahini is so versatile and probably one of the best possible ways to get calcium into little ones. I’ve been dipping pretty much all of Vida’s food in it!
I wanted to make her some of our baby led weaning blueberry oat bars, but thought, hold on, let’s put some tahini in! So I did just that, and they turned out beautifully. So much so, that we’ve all had a go at them, and now there are not enough left for Vida for the next few days… oops!
I usually do it in a tray bake, but decided to reduce the ingredients and do it in a loaf tin, because they tend to go off quite quickly so having too much isn’t always the best – although you can freeze these which is great.
The reduction in ingredients worked really well and this was the perfect breakfast option for her age (10 months). Older kids can have these too, and for kids who aren’t huge breakfast fans and prefer to snack on the go, these are a great option.
1 flax egg (1 tbsp ground flax mixed with 3 tbsp water)
1.5 cups oats
1/2 cup buckwheat flour
1 teaspoon baking powder
5 tbsp coconut oil
2 heaped tbsp runny tahini (it is usually runny when you buy it, but tends to harden over time)
Big handful of organic blueberries
Preheat oven to 180ºC and line a loaf tin with baking paper and grease with coconut oil.
Mix the flax and water to make the flax egg and set aside.
Heat the coconut oil gently in a saucepan and leave to cool.
Add the oats, flour and baking powder to a bowl and mix.
In another bowl mash the bananas and add the coconut oil, then the tahini, followed by the flax egg.
Add the dry mixture to the wet one, mixing until incorporated, then add in the blueberries and mix until evenly distributed.
Pour the mixture into the loaf tin and press down with a spoon or your fingers.
Bake for around 15 minutes, until starting to go golden on top but still moist inside.
Cool fully before removing from the oven then slice into small baby bites and serve.
