Curried Chickpeas

Let’s be honest, it can be a bore always trying to come up with new vegetarian meal options, so here I am making it easier for you 🙂

This was super easy to throw together, absolutely deliciously comforting and full of nutrients.

I brought it with to a dinner party where all the other guests were meat eaters but everyone enjoyed it – yay!

So easy to make, and not much more to say about it so here is the recipe:

Ingredients

2 cans chickpeas
A drizzle of olive oil
1 tsp cumin seeds
1 tsp mustard seeds
1/2 tsp ground cloves
1/2 tsp ground cinnamon
1 bay leaf
1 onion, finely chopped
3 cloves of garlic, slices
1 tin chopped tomatoes
1 tsp paprika
1 tsp ground coriander
1 tsp cumin
Himalayan salt and black pepper to taste
Handful chopped fresh coriander

Method

Start by heating the olive oil and adding the cumin seeds, mustard seeds, cloves, cinnamon and bay leaf and cook on a low heat for about 5 minutes.

Add the onion and garlic and cook slowly until the onion is soft.

Now add the chickpeas, tinned tomatoes, paprika, ground coriander, cumin, salt and pepper, mix, and let it simmer for 20 minutes.

5 minutes before the end, remove the bay leaf and stir in the fresh coriander.

Add salt and pepper to taste and serve.
